I am planning on making the Strawberry Cake with Strawberry Cream Cheese Frosting this weekend and would like to omit the coconut and nuts. If I do this, am I seriously altering the goodness of this cake and would I need to put something else in to make up for what I've left out? Will it still be moist?
Also, does it need to be in 3 layers? I only have two round pans and don't want to buy another if it's unnecessary. Do I need to change baking times if I use only two pans? Thank you for your patience...I'm a novice baker. |

| I made this for my Mom who does not like coconut so I left that out and probably left out the nuts too. It was good. Just be real diligent at getting rid of the liquid in the strawberries for the frosting. I was not and it was really, really soupy! |

| I made this without the coconut and nuts and it was delicious and moist. Also, I made it in only two layers. |
