Not sure where to post this but decided here... Like everyone, I can't wait to see the new book but meanwhile last week I made the cake Anne shared with us in her latest newsletter. It's a real keeper and got a big thumb's up from everyone who tried it. I made the cake exactly as written (including the nuts) although I cringed a little at the 1-1/2 cups of oil. Down the road, I may try using only 1 cup oil and substitute 1/2 cup applesauce to start. I'm making another to take to a group gathering but won't change a thing this time. I baked mine in a 12-cup bundt pan. I bake a couple of other fresh apple cakes that are excellent but we liked this one better. Loved the blend/qtys. of cinnamon/nutmeg and I think the touch of brown sugar was a good addition. I always dice the apples for the others but really liked the bigger chunks of apple in this one. I added the glaze as well but did not have heavy cream. Used milk instead and it worked fine although I'm sure it wasn't as thick as it should have been. I highly recommend you try this cake. Hi Carolyn,
Thanks for the review! I've been thinking of trying this cake, though the ingredient list is a little daunting to someone as fond of cake mix doctoring as I am. But, it's apple season, and your review is all I need to give it a try. My parents are coming to visit me for Thanksgiving, and I think this cake will be just what they need after the plane ride. Thanks!
