I found a recipe for the most amazing no-bake cookie that is absolutely to die for.
I know I can't repeat the original recipe here, but I did modify it a bit, so if it's ok to post with my changes, let me know and I will do so.
If it isn't, I'll just say that essentially it is a filling of basic cream cheese frosting with less powdered sugar, adding finely chopped nuts and baking chocolate sandwiched between 2 Nabisco Famous Chocolate Wafer cookies, then chilled. Believe me when I say the description doesn't do the final product justice.
So now I'm thinking of all these variations - like using the peanut butter frosting/filling from the CMD - a classic combo. Or adding some strawberry jam to the cream cheese. Or coconut, for a german chocolate version. Or chilled ganache for a truely chocolate experience. Or dipping the cookies in melted chocolate once they are filled. Or - well, you get my point.
I was wondering, though, does anyone know of a similar thickness cookie, but in a vanilla or plain flavor? I love the chocolate, but I know some others that would like a slightly less chocolaty version. It would have to be thin and pretty crispy to start out with. All I could come up with was gingersnaps, but not everyone likes that flavor, although it sounds great to me.
Let me know if y'all have any great substitution ideas.
