I have about 10 meyer lemons to use up, anyone have a really good recipe that showcases their flavor?

Hi Birdy,
I am actually in the hunt for some Meyer lemons as I came across a recipe for Olive Oil Cake which calls for them and although I know I could just sub regular lemons it seems as since the Meyers are in season it is worth my time to try and get a few. | This may be too late, but in one of the CMD books, there's a recipe for lemon curd, which is then used as a filling between layers of a lemon cake. I think a Meyer lemon curd would be nice. |

I have used up all but two of the meyer lemons but I appreciate the reminder of that recipe, I really love lemon curd and that one is easy and good!
