My daughter is getting married July 24. She is planning on having a dessert bar and wants a small cake for a topper. I was going to make her a 3 tier of 8 inch rounds and mini cupcakes. The couple wants something light because of summer. The groom thinks chocolate would be too heavy and they are thinking maybe something fruity. Also can't have a really runny, soft or refrigerated frosting.
Her wedding is in a restored dairy barn with a rustic romantic theme.
If anyone can suggest some cakes I could try I would love it!  |

What about lemon cake? I made one as part of a 3 tier baby shower cake last month and that tier was the first one gone! Or you could do a classic white cake with strawberry or some other fruit filling. For the frosting, have you ever worked with fondant? You wouldn't have to worry about that melting at all. Or you could try decorators buttercream, made with shortening instead of butter. _________________ When life gives you lemons, make grape juice. I agree with Jen, fondant won't melt and you can do many fun (or elegant, whatever you are looking for) things with it decorating wise. get a vanilla flavored one for a little extra flavor or you can add your own flavoring. There is a thin coat of buttercream on the cake so the fondant will adhere but not enough to melt off.
I still have to try it but the fresh strawberry cake from CMD1 always looks so good to me. Plus it is a pretty pink color.
