 Post subject: baking cakes

all of my cakes come out of the oven with the center higher. what do i do to prevent this? Someone told me to place a piece of wet cheescloth over the top before i put it in the oven....would this work?

you can buy insulated strips at bakers supply stores that you wrap around the outside of the pan that is supposed to prevent this. also baking more than one cake or even placing an extra pan in the oven on the other rack to absorb some heat may help (shouldn't bake cakes on top rack either). usually people just trim them after they are done if they need them perfectly flat, as in for wedding tiers. you can do this with a serated knife or dental floss works well.

Hi Sister, I follow a tip gleaned from this board and bake my cakes at 325 degrees. I find I have to increase the baking time a bit but my cakes bake without a dome.

Hi sister. Your cakes bake with a dome in the center, because the outside bakes faster than the middle. They sell baking strips especially made to be dampened in water, and then pinned around the outside of the cakes. Using these eliminates the problem because all parts of the cake bake at a more even rate. I hope this helps.
