 Post subject: Baking temp for 9 x 13 glass pan

I've learned from reading the many posts regarding oven temperature that many of you bake @ 325 for your Bundt pans. When a 9x13 pan is called for do any of you use glass pans in lieu of metal? If so, does reducing to 325 (in lieu of 350) also apply to glass pans? How would the baking time be affected? Thanks for any quidance you can provide. I don't post much but enjoy reading what the "regulars" have to say when I visit the board each week.

Hi KDS,
CMD P.361 talks about baking @ 325 in a glass pan especially if you have a fruit layer, because it will keep longer in a glass pan because of acid in fruit but I always bake everything I bake in glass @ 325 & bake it a few minutes longer. I bake all my bundts @ 325 & they do so much better (something I did'nt do before I joined this forum)...I bake 13 X 9 @ both temps., if it is a dark pan, I always use 325 and sometimes even with my metal pans I use 325...for my oven I find it usually always bakes a little better @325, but ovens are different...I would just say if you use 325 leave the cake a few minutes longer & watch it closely in those last minutes for other signs of doneness (sides pulling away from pan, browning on top, etc.)
