 Post subject: Sour Cream vs. mayo

Quick Question:

Can I substitute mayo for sour cream? I just ran out of sour cream and the thought of going to the grocery store kills me!

Hmm, do you have any kind of yogurt on hand? I'd use that before mayo. Mayo might flavor your cake too much, so maybe just half, and then use milk? Gah, somebody else answer too!! I'm too unsure of substitutions to answer confidently.

1 tablespoon white vinegar plus enough milk to make 1 cup, let stand 5 minutes before using.

1 tablespoon lemon juice plus enough evaporated milk to make 1 cup

1 cup plain yogurt

6 ounces cream cheese plus 3 tablespoon milk

1/3 cup melted butter plus 3/4 cup sour milk, for baking

3 tablespoons butter plus buttermilk to equal 1 cup

FYI:
I fixed the Darn Good Chocolate Cake with 1 cup of mayo instead of sour cream and I was very pleased with the outcome. Definitely something to remember next time.

Chocolate Midnight Cake, pages 55-57 in the Chocolate book contains 1 cup of mayonnaise and is an excellent cake. You would never know it contains mayonnaise.
