I picked up some Peach Mango Orange Spread from Costco recently. The flavor is fabulous! I could eat it out of the jar with a spoon. Ok, I have. But just a little. I would love some ideas on how to incorporate this into a cake. I'm coming up blank at the moment.

I just bought some too, it is terrific, something involving cream cheese icing would be good. I was thinking of maybe trying the kentucky blackberry jam cake but substituting this for the blackberry jam and maybe using an orange, white or lemon cake mix instead of spice and icing with cream cheese icing. It would be good on top of a cheesecake or as a cake filling too (or just eaten out of the jar... it is that good!!)

Are these spreads like a curd/jam?

You could try just dolloping a little bit on top of the frosting on cupcakes. I did this once with lemon curd on top of lemon cupcakes with cream cheese icing and they garnered lots of praise and inquiries. Another idea would be to inject the spread into cupcakes and there are now a variety of equipment being sold to make the injecting process quick and fail-proof.

My last thought/suggestion would be to use the spread as a filling for a layer cake as having something in the middle other than frosting can be a nice flavor alternative.

They are a cross between preserves and whole fruit canned pie filling, lots of fruit! your suggestion of using them for a filling between layers is a good one.

Here is my lastest experiment with this spread, it is in the oven now: I started with the recipe for " Kentucky Blackberry Jam Cake" in the CMDR! (page 90). I used a plain yellow cake mix (Duncan Hines) substituting the Peach Mango Orange Spread for the blackberry jam, added a half teaspoon of ground ginger and some orange zest (half a large orange) to the recipe. I also substituted craisins for the golden raisins and omitted the nuts (I don't like nuts in cake). It is baking nicely, smells great! When it cools I am going to ice it with " Orange Cream Cheese Icing" (page 474 of the CMDR!) I'll be eating it soon :wink: will report on the flavor then.

Well, the cake I baked in the above post turned out great. Very moist with a nice orangey peachy flavor from the spread. I iced it with cream cheese icing to which I added some orange zest and a couple of spoonfuls of the Peach Mango orange spread. It has a lovely pale orange color with a few chunks of the peaches still showing. I highly recommend it!
