Chicken Laredo

I received Ann's book last week - it is fantastic. I only wish there were pictures of every recipe like the previous books. The Chicken Laredo casserole is fabulous. I made it last night and served mexican rice on the side. It was quick and easy and delicious. I highly recommend it!

I agree! I made it for the first time tonight, and we loved it! I think I might try sharp cheddar in place of the Velveeta next time, though. They don't sell the Mexican-flavor Velveeta where we live, so I had to use the regular, plain kind. It had a nice gooey texture but not much flavor.

Thanks for the review. It looks like it would be a quick and easy recipe to make. I don't remember seeing the Mexican Flavored Velveeta here either, so I am glad for you comments.
