I'm so glad that I now have a forum to ask non baking questions. I don't have the book yet, since christmas is right around the corner. But I have a cooking question that hopefully someone can help me with. If a recipe calls for about a pound of ground meat. About how may meatballs could I get out of it. The size will be cocktail size...made with a small scoop.

Kelly, I thought this would be easy. I'd just check my years-old recipe calling for 2 lbs. of ground beef and halve it. Problem is, no total number of meatballs is listed (and I never made a note!) - probably because the amount would vary by the actual size we make them. Frankly, I just don't remember how many I got the last time I made them (over a year ago now). I made regular meatballs not long ago using a pound of ground beef. They weren't overly large and there were 12 I think. My guess would be about 30-36 - will depend on the size of your small scoop. I don't have a real small one but my holds an even tablespoon of cookie batter and is just right for filling mini-muffin tins. Hope someone can give you a more definitive answer. I looked up a few other recipes and they all called for frozen pre-made meatballs (I've never used them). Checked Anne's book and she doesn't have a recipe for this in her Appetizer section

Hi, Kelly! I don't know if this can be of any help, but I make sweet and sour meatballs as an entree for large events. The latest one had about 50 adults and I used 9 pounds of ground beef for medium-size meatballs (not large, not cocktail size either). Next time I will have to sit when I form the balls - my back really hurt afterwards from standing! Every single meatball was finished, to the last drop. Picturing 1 pound of meat in my head, I will venture to say that it will make about 25 cocktail size meatballs. Hope this is correct! Good luck!

Kelly, the amount of meatballs must vary if you add bread crumbs and egg and the size you make. I've got a recipe for mushroom meat balls that calls for 1 lb ground beef and makes 18 small balls.

Hi All: I have 1# packages of ground meat specially ground and buy 20 at a time. 1# is not really very much meat. Since I have it ground so lean that there isn't any grease in the skillet it goes a ways, because there isn't any waste, but it still is not very much meat. I would guess,it would be close if you get 18, but that sounds feasible.

I have a recipe that calls for 1 1/2 pounds of ground beef, along with bread crumbs and eggs. Rolling them into 1 inch balls I get about 25. I hope this helps.
