I first made this last year for my mother's birthday and it got rave reviews and everyone wanted the recipe. DH claims he doesn't like curry, but he loves this. He takes it for lunch with crackers. I make it with red seedless grapes instead of raisins, but would be good with either. I just like the freshness and texture of the grapes. I cut them in half and use sliced almonds. I also add chopped celery. It's good with pecans also.

Thanks for the link Phyliss. The red grapes sound refreshing. I'm another one who's a bit cautious about curry, but I'm going to have to give this a try and give my big sis a copy. She makes a chicken salad with pineapple herself. Do you use mayo or do you use Miracle Whip? I have both, just wondering which you prefer for this particular recipe. I bought the mayo for a mayo choc cake & haven't baked one yet. Thanks for your help, Patti

Here's similar recipe that I found in a free magazine from Raley's supermarket:

Chicken Salad with Mango

I love this recipe. The curry powder & the mango chutney give it a great zing and it is so easy to make. I usually use chopped green onions instead of red onion, and often use the packaged grilled or oven roasted chicken from Foster Farms or Oscar Mayer.

What a great light meal for all these very hot days of summer!! Thank you all for sharing with the rest of us. :D There's also, a good looking recipe in Dinner Doctor, pages 154-55 for "Asian Chicken Salad,"and red wine vinaigrette which might be pretty good. I started to bring a bottle of that home with me this morning and after looking at it, sat it back on the shelf. I love trying new things which sometimes become habitual to use, and as mentioned it's hard to have a lot of appetite when the temp stays mostly around 100 and upwards. :wink: Things like this would make it easier, and such a snap to fix. I'm just not too sure about the ramen noodles. Have you all used those much for salads and such?

Mary, Here's a review I did as well as others comments on the Asian Chicken Salad. I haven't made it again, because DH thought it was "too crunchy". I probably need to try again and change a few things up.
