 Post subject: Apricot chicken recipe

I found this Apricot chicken recipe in a Lipton cookbook, and it turned out delicious, with very little effort, so I thought this would be a good place to share it. I varied the vegetables a bit, using asparagus instead of zucchini. I thought broiled chicken breasts would turn out too dry and crusty, but they were wonderfully moist and tender with the apricot sauce. I found the chicken did need to cook longer than the 10 minutes listed (I cooked for an additional 5 minutes). I hope I pasted this link properly.

That really sounds like it would be quick and easy for sure, and such a nice dish to serve. I know an awfully lot of chicken is used, and many times people are looking for a little different way to prepare it that is still quick and easy. Looks like you've found one. Since the apricot flavor was so good the first time, I tried this recipe again and included 2 veggies my husband & I don't normally like, zucchini & squash. Lo and behold, in this recipe, even those tasted good to us! (We used a combo of about even parts red bell pepper, sliced carrot, zucchini, and yellow squash.) So this recipe might be a good way to get picky eaters to try some new veggies.

Glutton, I would have been afraid putting in ingredients a person won't normally eat would mess up the whole dish, so thank you for letting us know, that isn't necessarily so, and what you discovered, may just make us all a bit more brave. :D
