 Post subject: Hey! Hey What's for supper/dinner tonight at your house?

Hello, you very busy beavers out there in CMD cyberspace kitchens. I know there are a million and one things to do, places to go, people to see all in preparation for Thanksgiving, but everyone has to eat in the meantime too, so what are you doing for your evening meal tonight?

You all surely must think most of all I cook are boneless extra trim pork chops, but if you all shop the sales, my guess is most of you also, cook a lot of them. I'm going to fix some tonight, and I'll first sprinkle with a bit of black pepper, sear them in a skillet, saute a thinly sliced onion, bell peppers, just a smidgen of finely diced jalapeño pepper, a little diced garlic and around 1 stick of celery diced. Then I'm seriously thinking about pitching all that into a crock pot, drizzling a little balsamic vinegar over the tops, followed by around 1/4 cup of red cooking wine, and some cherry coke, then letting it cook itself. There's still time to have it done for tonight. Awhile back I did all that except instead of the crock pot, I sprayed a Pyrex baking dish with a little cooking spray, thoroughly washed a couple of red delicious apples, sliced those, laid them in the bottom of the baking dish followed by the pork chops, and thinly sliced Yukon Gold potatoes sprinkled a bit of black pepper lightly over top the potatoes (if you use salt you may want to lightly salt the potatoes), then spooned the things I sauteed on top the potato slices, then from what was in the skillet the balsamic vinegar, and red cooking wine and coke, then over all that, I poured just a bit more cherry coke. I covered all that with a double sheet of aluminum foil and popped it into a 350° oven. I'm sorry, but I didn't time it. I just sort of seem to have a built in clock that tells me about when they are done, and then I check, but you'll need to cook that until the potatoes are done, and since you have already partially cooked the chops on the stove top, they should also, be done at that time. I thought it made a pretty good dish, and it's an all in one thing, which I sort of like. I hope someone else may also, find that's something they might like to try and then enjoy it. Cooking to me is sort of imagination of things that work together, and then just simply trying them. If the flavors ordinarily are complimentary, that usually works pretty well. If I don't do the potato bit today, I'll be putting some of the frozen roasting ears in the oven. I just like them a bit better fixed in the oven than in the microwave. My oldest, who many times eats with me in the evening says he can't tell the difference, so maybe, it's just my imagination. :D Adding a green veggie, and a tossed green salad gives you a nice variation of both color and textures which I think is so important to make a meal a bit more interesting, and make a fairly well balanced meal with both yellow and green veggies, without going overboard and just having the starchy ones.

Sometimes you can also, combine both the savory lettuce and fruits for a nice salad. Does anyone remember the shredded carrot and apple salad, sometimes with raisins added to it? It seems that used to be pretty popular (at least where I was raised), and probably because those were things just about every kitchen had at all times, so it was easy to quickly make without running to the store for something else. :wink:

Tuesday night is always "pizza night" at our house even during Thanksgiving week. The three of us like our pizzas "built" differently so I make "individual" pizzas using Mediterranean style flat (no pocket) pita bread...DD calls these "pit-zas"! LOL Preheat the oven to 350; brush each pita with olive oil; add pizza sauce (we like Ragu Homemade Style Pizza Sauce) and the toppings of choice. Bake on a cookie sheet or pizza pan 15 - 20 minutes. Doesn't get much easier than that! :wink:

mmmm those pork chops sound good!

After work it's a race home to fix mashed potatoes for Tuesday thanksgiving. Gonna leave the garlic out - I'm getting sick of garlic mashed. I will put cream cheese, lots of butter, and whole milk. Wish I had picked up some fresh chives.

Fly home mid day tomorrow.

Mom just called - she's at the grocery store - wanted to know if I wanted duck for dinner tomorrow night! :roll: Heck no! Now I loooove duck, but:

1) Who makes duck for dinner the night before thanksgiving?

2) You know if she bought it... I'd have to cook it and I'd have to clean up! :lol:

Catherine, I agree. I love garlic mashed potatoes, once in awhile, but too much of a good thing is just too much of it, and I want a change. :D The alternate way you're fixing them will be very good and probably a welcome change for several others as well.

I saw a thing on Food Network last night and they did a poll about what's for dinner the night before Thanksgiving and PIZZA won, hands down. We wouldn't want to break tradition, would we?

Well, tonight was a wild night, so we had "fast food" at home...but not pizza! I made Philly Cheesesteak sandwiches and french fries. The kids like Kraft singles melted on their steaks, while the grownups like swiss, and I use Earthgrains French rolls. About every other month Angel Food includes a pack of minute steaks, so there are usually some in the freezer. Easy, yummy, and quick!

I prepared a pork chop recipe that my DD created. My DH isn't crazy about rice, but I thought if I put some of the sauce from the chops over top when serving it, he might reconsider. He certainly did let me know it was a great supper. Go figure!

Joyce, it gives the rice flavor, and helps it, don't you think when we do things like that? We aren't big rice eaters either, but will sometimes eat some when added in with things. I cook rice using broth instead of water, then add a little minced onion minced bell pepper, slivers of butter and sometimes a bit of mild to medium salsa or picante, but I've started cooking rice in the oven using an 8-inch Pyrex baking dish, and that really makes nice tender fluffy rice even cooking brown rice which takes so long to cook.

Joyce, I think the cinnamon, sugar and milk on white rice must be a northern habit, because until I came down here, I really didn't know people ate it any other way unless it was maybe chicken and rice soup, and you know I don't eat foul, but I use to like that once in awhile mostly for the rice though. I did see butter put on it when they put me on a diet of lamb, rice and pears one time for allergies when I was a kid, and I just thought that was gross if one were going to eat it with milk and sugar. Fact is, I couldn't get it down, with the butter that way. With the cinnamon, sugar and rice, Mama used to many times cook some raisins in it for the added iron she always said, and of course the flavor, but she was so vitamin and mineral conscious and such a stickler when it came to trying to feed us right to "build those strong bones, and healthy bodies etc.," that she cooked very faithfully by the basic 7 chart, which the name has once again been changed, but still a very good idea I'm sure.

I think you're right to call it a Northern thing, as I've not run across anyone in NC who eats it the way I love to.

I guess Mothers always want their children to eat healthy, so they'll make every attempt to make what our bodies require.

Saw this a little late but there seem to be 2 Tues. before TG wave lengths: pork chops and pizza! I did my pork rack on cranberry-orange-apple stuffing (just aas a little preview of TG flavors for the kids) with the orange-balsamic glaze. Tonight it is our traditional night-before-TG fare: Chinese take out! Another good way to get lots of veggies into the kids.

It's been cool enough that soup looks good and the grocery has had some wonderful veggies on sale. So we have had cream of asparagus soup that was delicious this week and tonight I have fixed cream of broccoli soup....using canned lo sodium chicken broth and skimmed evaporated milk with lots of good veggie seasonings, the soup has been excellent. So easy to do with the canned "help" and a blender to get the veggies all smooth and creamy. Just fix a toasty roll with melted cheese and "you're good to go."

Hi,
:lol: Chili with cornbread. It is really rainy and cold here. I thought about going out and getting Chinese take out, but the weather was so nasty, I thought chili would do. Besides I think I injured my rotator cuff again and they put me on an anti-inflamatory and pain pills. I've been sleeping a lot, but moving my arm for the exercise. When the dogs want me up and about they give me a loud bark.
They are funny, they want me in the living room with them.
