Does anyone have a good recipe for corn? Just your basic, whole kernel corn (not on the cob) with some spices....

Hi,

I love corn! I always put bacon bits in mine - gives it a nice flavor. You could use turkey bacon in honor of Thanksgiving :D You could also add chopped red pepper. With both, basic salt and pepper seasoning works just fine.

Ilike baked corn. Just melt a little butter in a pan. Add 1 Tbsp. flour. When that is combined. Add eggs and milk and put in a casserole.Bake it in the oven for about 30 to 45 min. Test it like you would for a custard. I don't have a recipe to follow. I just go by how it looks. That is an old time recipe. We used it for the dried corn which I talked about in another post, but canned or frozen is fine.

Oh, I love corn as well!! It's a favorite with part of my bunch. Sometimes when I don't have much time, and yet want it on the table, I put a dash of pepper in it and some butter, then maybe, a little parsley....nothing special, but quick and it does flavor it.

AuntyEm thank your for your suggestion. I'll bet it's good. Is it sort of an escalloped corn, or does one use cracker crumbs in an escalloped one?? It seems like my grandmother use to make something like that.

Hi,

We never used cracker crumbs. When the dish comes out of the oven, it looks like a custard. Oh, I forgot to mention, I put about a tablespoon of sugar in with the milk and eggs. When I was a kid that was my favorite Thanksgiving dish. Last night I ordered the dried corn on the internet and this morning the company called and asked if I wanted it for Thanksgiving. I thought that was really nice of them.
Since I am going to serve it on the weekend, I didn't feel it was necessary to pay the additional postage. I just thought it was a nice customer service touch, something that is surely lacking a lot of time.

Thanks AuntyEm! :D I so agree with you about the Customer Service bit. It was something as kids you and, were accustomed to seeing, but now, PR so often is lacking so when we do see it, that really makes us appreciative.

If you want corn that taste EXACTLY like fresh cut from the cob corn, try McKenzie's frozen corn. It is packaged in a tube shape and comes in Golden Yellow and White. Cook it exactly as it directs on the package, which is to empty the frozen corn in a microwave dish and cook for a few minutes. Add no salt, sugar, butter, etc. My DDL, who is a corn lover, could not believe it wasn't fresh. I always take it to potlucks, and everybody thinks it's fresh corn. Opal

That's good to know! We use the Great Value frozen corn, and I just add a drop of water and microwave it for between 8 and 10 minutes. My kids don't even want butter on it!

I don't remember ever seeing the McKenzie brand name here, but I'll be watching. I did freeze some corn still in the husks and that seems to help a lot to retain the fresh taste.
