I don't think rice does well in the crock pot. It gets gummy and doesn't cook fluffy.

I made beef fajitas last night, grilling a Flat Iron Steak. I had never heard of that before, but Kroger had it on sale last week. It is a very good, tender, juicy and flavorful cut of meat. I sauteed red,green and yellow bell peppers along with a sweet onion as well. I made a corn and black bean dish, seasoning with cumin, garlic, onion and the 3 colors of peppers. I have enough left over to make quesadillas for supper with the corn and black bean dish and a salad on the side. Here's a link that tells about the Flat Iron Steak:

I will check our Kroger tomorrow for one to grill.
Did you marinade yours? Stir Frying peppers and onions to serve with it sounds like a winner to me.
We'll be eating with our son and his family Easter lunch, so I probably won't be cooking much. He's on a diet, and the kids aren't allowed sweets (except when they are at Grandmama's and the parents aren't around), so I probably won't be baking anything for the lunch. I'll have the kids in the morning, so I plan to dye a dozen eggs to entertain them. I used Wilton's gel coloring last year as I read they were good to use. The eggs turned out even uglier than mine usually are. So, I'm back to those little tablets that have been around forever. I do have some bananas getting spotted before we've eaten a one, so I may turn them into some kind of cake or bread. Happy Easter. Opal

Opal, I did marinate my flat iron steak in a fajita marinade - but it's one that you don't marinade very long (10-15 minutes).

Those dye tablets work well. We always used the liquid food coloring with vinegar growing up. Tablets aren't as messy.

I finally got around to making the yellow rice tonight for dinner. We ended up going out Thursday night, since I was too tired to do much of anything else. I added turkey smoked sausage and a bag of frozen peas and carrots (I cooked them 6 minutes in the microwave first.) Now if it will only get done...I have terrible luck with rice!

Diane, I also, had trouble cooking rice, a lot of times until I used the oven method. Did you read this post with the linkstelling how to cook rice in the oven? That just makes it so easy to make perfect rice.

This is an interesting method, Mary. Rice has always been a staple at my house, so I've been making rice since about 2nd grade. I've never seen the oven method before, but I'm intrigued. I'll have try it sometime.

Mary,
I will try that method when I make rice later for dinner; we're having pinto beans, rice, and cornbread for dinner. Last night I was dog-tired, so I just made the yellow rice on the stove. I guess I'm just lucky that it turned out at all...I was too tired to really even think!
