I've decided to serve it for dinner guests on Saturday, with a big bowl of basmati rice, but what should I do for sides?

Thanks in advance for any ideas!

Hey Valerie,

That's a good question. All I can think of to go with curry chicken and apple stew would be some sort of soup or vegetables with Indian spices. Do you have an Indian menu or cookbook on hand? Maybe that would give you inspiration. I'm at work now, and don't have access to either....

I would probably do green beans, either with chopped nuts or with crispy fried onions, and a fresh fruit salad with a light yogurt dressing. Alternatively a cucumber salad would work too. Let us know what you decide and how it is!

Kathy,

I just got done discussing with my next-cube neighbor, and that's almost exactly what we decided on: Green beans with almonds, fruit salad and a tossed salad! But a cucumber salad sounds good, too...and more Indian. I'll have to hunt for a good recipe.

Smilie,

I actually do have an Indian cookbook, but it's one in which every recipe has about 537 ingredients, none of which currently resides in my cabinets, so I'm on the hunt for something simpler!

Thanks!

~Valerie
