I am having a small (just four of us) dinner party this weekend. I'm making these Rice Stuffed Cornish Games. I think for dessert I'll make Frozen Chocolate Souffles. What do you think I should make as a vegetable? I'm debating between a simple spinach salad, and some other vegetable. I don't know what that some other vegetable is yet... Ideas?

Salsa Salad
1 can each
black beans drained
kidney beans drained
button mushrooms drained
corn thawed if frozen
onion
green & red & yellow peppers diced small
pineapple drained

very pretty & different

Or:

1 pkg. frozen petite peas thawed
1 cup diced celery
1 cup chopped cauliflower
1/4 cup diced green onion
1 cup chopped cashwes or whole
1/2 cup sour cream
1 cup ranch dressing
garnish with crumbled bacon
combine all ingrediants and chill

Thank you for your suggestions. I ended up making some roasted vegetables (potatoes, broccoli, carrots, and a pack of ranch seasoning); it turned out nicely.

I like your suggestions, though. They are different than what I usually make. I'll probably have people over in another couple weeks, and I think I'll try the Salsa Salad. I especially like how the dishes are cold, especially in this summer heat!
