 Post subject: What can I do with store-bought potato salad?

We were divvying up the leftovers from a potluck yesterday after some of the guests had left, and I ended up with a container of store-bought potato salad. Not being one to turn up my nose at free food, I plan to eat it, but it'd be nice to make it a little more palatable. It's a rather plain, flavorless version. It also has egg in it. Any thoughts for snazzing it up? Thanks!

That's a tough one, Valerie. Especially from someone who doesn't eat potato salad! Here are my thoughts:

--Make a potato salad sandwhich
--Add bacon to the potato salad
--Add some dijon mustard or lemon juice
--Add some garlic

That's all I can think of. Let us know what you make. Maybe it'll inspire me to try some potato salad!

I ended up adding onion and lots of black pepper. It still tasted pretty wretched, but at least it was slightly more palatable. :P

I get the potato salad on occasion from our local supermarket. It's flat tasting and loaded with mayonnaise. I add minced onion, celery, and about a fourth of a teaspoon yellow mustard, not the dry kind. It perks it up. Hope that helps. :wink:
