Okay. I have a potluck coming up in a couple weeks. I wanted to make my twice-baked potatoes. The problem is that I'll take them to the office in the morning, and they will sit in the fridge until lunch. Then I'll have to heat them up in the microwave. Would that work, or would the texture not be good?

Not sure what your appliance situation at work is, but it seems like a few minutes in the microwave to knock off the chill and then maybe a minute or two in the oven for texture would set you up. But, if you don't have an oven, I don't think the microwave would damage them too much. It's hard to mess up twice-backed potatoes!

They should be fine in the microwave. I haven't made them myself, but my mom used to make twice baked potatoes for us all the time, and she would always make extras for us to have the next day.. They were always good out of the microwave, the biggest problem I ever had was the middle was still cold when I took them out! I think as long as you make sure the middle is hot they will be good!
