 Post subject: nacho cheese soup

I am planning to make the Nacho Cheese Soup tonight, but have been to two large supermarkets and have not found Campbell's Fiesta Nacho Cheese soup. What can I substitute. Hurry please - a foot of snow on the way!
Ps we had salmon w/ spinach & coconut last night - fab!

Try combining the regular cheese soup with some salsa. I would guess that about ΒΌ cup of salsa would work. Please post a review!

I did use the idea of Campbell's cheddar cheese soup with a quarter cup of salsa to replace the Fiesta soup I couldn't find. It was a big hit! We love mexican foo and love soup, so it's great for us. My teenage daughter, who loves thick soups like chowder, said she would like it thicker - maybe less chicken broth. All in all it's a thumbs up. :D

Yeah, I think the Campbell's Fiesta soup must've been on shelves when Anne was working on the book, but subsequently discontinued, because I've never seen it anywhere either. I used the plain cheddar soup and I think I added extra salsa and/or extra spices like chili powder and cumin. We loved this soup, too.

 Post subject: Found the Fiesta Nacho Cheese Soup!

Just wanted to say that I found the Campbell's Fiesta Nacho Cheese Soup at our newly-opened WalMart Supercenter in MA. So it DOES exist! I'm planning on making the soup this week.

This is my first time posting here, and I've never visited the website for a cookbook author before. I can't believe how much I love this book, and that EVERY recipe I've tried has been really easy and has come out perfectly. We're having the Tuscan Chicken again tonight, for about the 8th time in the past two months!

:D Thank you, Marla! I live in MA, too, but I never would've thought of checking at a Wal-Mart. I'll be interested to see if the soup turns out differently when using this kind.

Having found the Campbell's "fiesta" soup at Wal-mart, I tried the Nacho soup recipe again. Frankly I didn't think it was much different from using plain ol' cheddar cheese soup. The "fiesta" soup had some chunks of tomato and a LITTLE more flavor than plain cheese soup, but I still had to add quite a bit of salsa and cumin to liven it up.
I think I need to get a life! :lol:
