 Post subject: Need HELP Quick!!!!

I was getting everything ready to make the Chocolate Kahlua Cake in CCMD later this afternoon, and I just noticed the recipe calls for a plain butter recipe fudge cake mix. When I checked my mix supply I found that the only chocolate ones I have are DH Moist Deluxe Deep Chocolate, German Chocolate, and Devil's Food. We don't have the same selection of mixes here in Canada and I don't think I have ever seen a DH mix (the only plain ones I know of) designated "butter recipe". I usually replace all the oil in a recipe with melted butter anyways, so I'm wondering if this cake will be as delicious using the DH Deep Chocolate mix and melted butter. The cake is for work, so I'd like it to be really good!! Thanks. Sadie

Hi Sadie,
here's the link to the canadian equivalents, Butter fudge is the same as our chocolate fudge. The package directions for this cake use 3/4 cup liquid instead of the 1 1/4 usually found. Not sure how the others will substitute. The only place I've seen the chocolate fudge recipe is hy and zels. Let us know what happens!

Well, since I love the more chocolatey ones, I vote for the Deep Chocolate and the butter. Someone else may have a different idea, but that is what I would do. Let us know what happens. Thank you. :)

Hi Jean and Mary - Thought you might like to know how the cake turned out. I was disappointed, but everyone at work seemed to like it. It wasn't as moist as I thought it would be. I've always made scratch cakes, and I'm wondering if the doctored mixes take some getting used to. I used the DH Dark Chocolate mix (I didn't have time to go out and get a fudge mix) and 1 cup of melted butter, instead of the butter/oil mix in the recipe and the plain butter fudge cake mix. I don't know if this would have made a significant difference. I'm sure the cake wasn't over baked. It was only in for 50 minutes. I took it out while there were still a few crumbs clinging to my cake tester. I used the chocolate Kahlua dream glaze in the CCMD book, but I couldn't taste Kahlua in the cake or the glaze. Maybe my tastebuds are a bit rusty! I have to admit that I preferred the scratch chocolate zucchini bundt cake I made at the beginning of the week to this one. It was a lot more moist and I liked the texture of it. I'm going to try the chocolate cake with the can of cherry pie filling in it next. It's gotten some great reviews on the BB. Hi Sadie: I'm sorry you were disappointed in the cake, but thanks for the review. The "Chocolate Covered Cherry Cake" in CMD on pages 50-51 is really good in my opinion, and I have made it several times, except I usually use a "Dark Chocolate Fudge Cake Mix," add a pkg. of Instant Chocolate Fudge Pudding and Pie filling,increase the eggs to 3,the almond extract to 1 Tbsp. and throw in a cup of chocolate chips. I am such a chocoholic though, that I like all the chocolate that I can get. Then you can always either dust with powdered sugar, or frost with one of the chocolate glazes or frostings. There is a glaze recipe included with the recipe, but I have never made it. I don't know why,because it may be really good, but I think we were always too anxious to cut into this cake to wait for a glaze. Love your reviews. Thanks, and keep them coming.

Mary K, Thanks. I've made a note of your changes to the Chocolate Covered Cherry Cake. It seems to be very popular. I found many postings for it when I did a search. I'm looking forward to trying it.

Sadie, I use BC Triple Chocolate cake mix for the chocolate cakes I bake and I love it. I'm sorry the Chocolate Kahlua Cake wasn't a success, perhaps try it again with a different mix.

Hi Regina: I too, love that BC Triple Chocolate Cake Mix. In fact, I have one that I made up in the kitchen right, now. Then I often use the Instant Chocolate Fudge Pudding and Pie Filling. Sometimes, I put some instant coffee crystals in my chocolate cakes. I have some other chocolate cake mixes to use up and I don't know why I bought Devil's Food mix, because it really isn't as chocolaty as I prefer. I may use some of those less desirable mixes to make cookies, and then of course, as we all do, doctor them. By the time we get done I am not sure they always even resemble the original intent, but isn't it fun?It all seems to disappear. :lol:
