Just received the book and LOVE it!! I am wondering if the recipes , esp the Mac N Cheese and the Chicken Tettrazini can be made then frozen for future meals without hurting the taste, texture, etc.

I know in the "Tips" box Anne says you can freeze the Chicken Tetrazzini. I wanted to make this tonight, thinking my sister & her husband would be in the area but their plans changed. It makes a lot so when I make it, I definitely will be making two casseroles - one to eat and one to freeze. I love to do that for those extra busy weeks. Not sure on the Mac & Cheese but go ahead and try it. After all, it seems to work for Stouffer's! :wink:

Thank you for the feedback. I was thinking the same thing in reference to Stouffers! Well, today is the day, as I am spending the day cooking and freezing! Later I will be able to let you know how they turned out, as I am just now readying my freezer for the winter. Wish me luck!!

Barbara, I don't have the book yet (DH, are you listening?) but one tip I've learned about freezing food is to put them in the fridge, uncovered and in shallow containers and let them get good and cold before you freeze them. Apparently it makes for a better thawed product.
I've spent the past few nights making chili, stew,pasta sauce and french onion soup for the freezer. I think it's the bear in me coming out!
