 Post subject: Quick and easy dinner idea

Just did a really quick and yummy dinner, even my picky eater 5 yr old loved it and gobbled it right up. Baked potato topped with some shredded pork barbecue (heated in the microwave) and a handful of shredded cheddar. Salad of fresh tomatoes and cukes from the garden and some fresh fruit. Potatoes had to bake but otherwise the whole thing went together in less than 15 minutes!

I too fixed baked potatoes tonight. I love those things. My sister would tell you the type meal you fixed tonight is right down my alley, and she has often said I could live on a baked potato with a salad and fruit, and be happy. She's just about right. Sometimes when it's hot it's just hard to think of something different to cook, and those things are just a fit. Never argue with the taste of a 5 year old when it's something like that. I would say he (I believe he is the 5 year old) has very good taste. :wink: Thank you for sharing with us.

That's a good idea, Kathy. I have some of that Tyson precooked beef tips with gravy - bet those would be good over a potato too. I had thought I might saute mushrooms and add wine for a quickie strogonoff but the potatoes are a quicker idea! :lol:

I made baked sweet potatoes last night. There was a special on those wrapped ready for the microwave ones. My roommate and daughter both seemed to really like them. I made shake n' bake pork chops with them.

I feel like I'm not really 'cooking' with all of these prepackaged foods - but as long as I try to serve it with a veggie or salad... it's almost homemade right? :oops: I just keep telling myself "It's better than McD's or Pizza Hut every night." And some nights - those are the only other options!

As far as I'm concerned, there wouldn't be anything that wouldn't taste great over top a baked potato. :lol:
