I love to share and trade recipes. If anyone else has some tried and true recipes, please start a new thread and share!! (or just post on this thread if you are shy ;) )


I have two recipes to share here: the first one uses a cake mix and the second is completely from scratch.


The first one is easier and lower in fat. It is made with a cake mix and has a slight cake mix-y taste to it, but that doesn't bother me becasue I like cake mix. The banana flavor is nice and strong, though, so if you didn't know there was cake mix in it, you probably wouldn't taste that cake mix-y-ness. This recipe is not as dense as a regular bar recipe, but it isn't as airy as a cake. it is kind of in between.

The second one is more dense than the one that uses cake mix. It still isn't quite as dense as a regular bar recipe, but it bears almost no resemblance to a cake. The second one is also less sweet than the first one. Both recipes are delicious and have a great banana butterscotch flavor, but I think I like the second one better because I like that it is more dense.

Banana Butterscotch Bars

3 ripe medium bananas -- mashed (about 1 1/2 cups)
18 1/4 ozs yellow cake mix
2 cups quick cooking oats -- don't use old fashioned rolled oats!
1 cup butterscotch chips

Preheat oven to 350 degrees. With a mixer on medium speed, mix bananas for one minute. Add cake mix and continue mixing for 1 1/2 to 2 minutes or until all ingredients are blended. With a rubber spatula, stir in oats and butterscotch chips until well blended. Spread into a greased 9x13 pan. Bake for 35 minutes or until a toothpick comes out clean.

Butterscotch Banana Bars

3/4 cup butter -- softened
1/2 c packed brown sugar
1/2 c sugar
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 tsp ground nutmeg
1 1/2 c mashed ripe bananas -- (3 bananas)
1 1/2 cups quick-cooking oats -- don't use old-fashioned rolled oats
1 cup butterscotch chips

In a large mixing bowl, cream butter and sugar. Beat in egg. Combine the flour, salt, baking soda and nutmeg; gradually add to the creamed mixture. Add bananas. Stir in oats and butterscotch chips. Spread batter into greased 13x9 inch pan and smooth the top so it is even. Bake at 350 for 35 minutes or until a toothpick comes out clean.

Thanks Frosty for the two banana recipes. I always have a couple of bananas left at the end of the week - and now I have 2 more recipes to try. Thanks again!
