Hi Ericka, I use an awfully lot of onions, some garlic, parsley, and lots of peppers....mainly bell, but you can also, if you like green chilies and so forth they also, help. I haven't checked sodium content on the cans of green chilies, but that would be a good idea. I know a girl one time who thought she was staying away from salt by using lots of catsup on things. She didn't realize it also, contains some sodium. There usually are additives, including more sodium in ready prepared things as compared to fresh.

I believe there are also, others here who have to use a low sodium diet, and I'm sure they have many more creative ways of fixing tasty meals.

Good luck with your new venture. :D

I think fresh lemon and/or lime does a lot for perking up flavor when the sodium must be low. Horseradish (if you like the kick) is also great.

Thank you both. I have another question. I'm cooking low salt food for my husband, Do you think it's unfair not to eat with him? I baked fish for him last night and fried mine. I told him next time I'll eat with him.

Erika, I'm sure not everyone will agree with me, but for my part, I think when we are adults we pretty much realize there are just certain things that we have to do to maintain a certain amount of decent health....maybe, even for survival, and my idea is if I have to eat a sodium free and baked, and someone else chooses to eat fried and salted food, then I wouldn't have a problem with them sitting down and eating theirs with me while I ate what I can eat. I would however miss their company at the table. That's just my 2ยข worth.

Mary,
Your're right, I guess that's why I'm feeling so bad now. Tonight, I plan to cook only one meal for my family. Thank you, I appreciate your suggestions and help. :D

Ericka,
I know you said you had Mrs. Dash, but I wanted to encourage you to try some of their varieties. My favorite is their Garlic and Herb...it is sooo good on a baked potato (plus a little cheese and bacon bits!) It adds so much flavor. I have tried their Chipotle and Tomato and Basil blends, and liked them pretty well. I don't care for their Italian blend very much, but when I make Italian food, I usually just add my own garlic, onion, basil, bay, and oregano to taste.
I also want to encourage you to eat the same food as your husband. It will support him, and give you more motivation to find and try different recipes. Good luck!
Diane

Thank you, Diane for your kind words. That's exactly what I bought Garlic and Herb. I'm going back to the store this evening to pick up some things for him.

I too think that if you eat the same as he does, at least on occasion, you'll get a better idea of what works and what doesn't; but I too think a reasonable adult would not expect everyone to share their special dietary needs, as long as they share the social aspect of the meal. (P.S. my 5 year old has a dairy allergy so he gets soy or rice ice cream, soy milk, etc. - even he doesn't expect that everyone's food is identical :)
