I know this is not a cake question, but I was wondering if anyone has a favorite jello recipe for Thanksgiving. I figured since I was making a cake mix doctor dessert it might be ok to ask :)

This is my mother's favorite jello recipe - and always made at Thanksgiving:

ORANGE JELLO SALAD

2 packages orange gelatin powder -- 6 oz each
1 1/2 cups boiling water
1 can pineapple, crushed
8 3/4 oz, w/juice
2 large carrots -- shredded finely
2 cups whip topping mix -- Cool Whip/Dream Whip
1 cup sour cream
1/4 cup mayonnaise
1 Tablespoon lemon juice

Dissolve gelatin in water. Add shredded carrots and pineapple with juice. Let set until thickness of egg white. Put aside.

Add whipped topping or mixed up Dream Whip (1/2 cup cold milk and 1 teaspoon vanilla), sour cream, lemon juice, and mayonnaise. Mix 3/4 of this mixture with the jello combination. Chill until set. (I usually make 1 1/2 times the original sour cream mixture, putting 1 full recipe in the jello combination and reserving the extra 1/2 for topping on the jello or in a side bowl.)

This will make the fresh cranberry folks cringe a little but our family likes it. I make this year-round for DH, using only 1 sm box of Jell-O and an 8-oz can of crushed pineapple. I think it's good with a few nuts thrown (say 3/4 cup) but there are too many at family dinners who don't like nuts (imagine!).

Cranberry Jell-O Salad
2 3-oz. boxes black cherry Jell-O
2 cups boiling water
1 16-oz. can whole cranberry sauce*
1 20-oz. can crushed pineapple-Drain & reserve juice

Dissolve the Jell-O in boiling water in a large bowl. Add the cranberry sauce to the hot Jell-O mixture and mix well. Add enough water (if needed) to the reserved pineapple juice to measure 3/4 cup. Add the pineapple and juice mixture to the Jell-O. Pour into a large mold or use a rectangle baking dish and cut into squares. I usually put it in a baking dish and stir every now and then until it starts to congeal.

*Ocean Spray makes something called CranFruit but it's seasonal here. I use Cranberry Orange Sauce flavor, drained slightly (two 12-oz. containers - similar to margarine tubs). It's more like a crushed cranberry relish. When I can't find this, I use the one can of whole cranberry sauce. Because of the grands, I'll run one of those hand blenders through it to crush it up more and take out any rolled skins.

This has no Jell-O in it but it makes a quick, tasty
Cranberry Sauce
1 8-oz. can whole cranberry sauce
1 8-oz. can crushed pineapple, drained
1 cup orange marmalade

Combine all ingredients and chill.

Over thirty years ago an elderly friend gave me this recipe and I used to make it, but it has been some time and even though I have the recipe card where she wrote it, the amounts are not always given. Lots of us sort of wing it at times, when we cook and so I am going to share it as she has it written because, I thought it was quite good. I always used the cherry Jell-O, and I don't remember this being a real firm salad. Since I have dug this out, I believe I will make it, now.

CRANBERRY SALAD
1 small pkg.(3 ounce) Cherry or any kind Jell-O dissolved in 1 scant cup boiling water. Grind 2 cups washed and well drained cranberries, 1 orange, 2 small or 1 large apple and add 1 cup sugar and pinch of salt. Add chopped celery and a few chopped grapes. May add a few chopped nuts. Add to cooled Jell-O and let congeal. Serve on lettuce leaf with a little salad dressing on top. Now, we might even use a whipped topping.
