Does anyone have a tried and true method for chopping nuts so that they are uniform in shape?

I've tried using my Cuisinart Mini Prep but it tends to overchop the nuts.

I have an old nut grinder probably from the '60's (maybe even the late '50's!) that has a glass bottom and a plastic top into which you place the nuts. It has a metal insert. You just turn the handle to grind the nuts. I mostly love it because of the uniform size but it still grinds small (but not like a processor). I know you're much too young to have seen these but maybe kitchen stores still sell a little hand-crank grinder. I've just never looked for any. I keep it filled and store in the fridge. When I want larger nut meats, I just put them on a wooden cutting board and chop with a knife by hand.

Have you tried a Food Chopper? It's manual, so you have more control over texture, etc. Mine is Pampered Chef, but Zyliss also makes one that you can buy in the stores.
