 Post subject: Less Dense Cheesecake recipe request

I am a huge cheesecake fan. I love all kinds but the cheesecakes I have made have always been the really dense kind. A few weeks ago I tried a piece of cheesecake at a pot-luck that was taller and less dense than the cheesecake recipes I have. It was a lighter kind of fluffy type. I don't know all the different types of cheesecake but I do know that it was not New York style. Can anyone point me towards a cheesecake recipe like the kind I tried?

Do you think the batter was made from entirely cream cheese or do you think something else (perhaps ricotta) was mixed added? Note, one of the famous cheesecake makers here in NY makers her cheesecakes lighter by separating the egg yolks and whites, whipping the whites to soft peaks and adding them last to the batter (saw her teach Bobby Flay this technique on Food Network) so it might be a cheesecake like this that you tasted.

I don't believe the one I tried recently had ricotta in it. I have made the ricotta cheesecakes before and while they are different from the cream cheese version they were still not as tall and fluffy. The whipping the egg whites technique does sound like a possibility though. It also seems like I have read cheesecake recipes that called for whipping cream.

I made Alton Brown's Sour Cream Cheesecake yesterday. It uses 20 oz cream cheese, 1 1/2 cups sour cream, 1/3 cup whipping cream.

I can't wait to try it tonight. I hope it will be the fluffy kind I have been looking for.

Well, it still was not like the cheesecake recipe I am looking for but it was delicious. I made it in a spring form pan covered in foil and it was beautiful. I didn't even think to take pictures though. It may not have been like the recipe I'm looking for but I will absoutely make it again. Everyone in the family loved it.
