This is interesting. I am wondering what in the ingredients for these mixes is producing the outcomes you are experiencing.
Do you think the mixes are just too heavy or are the flavors more the issue? Not sure what the directions call for but you might try separating the eggs, whipping the whites separately and adding them into the batter at the end of the mixing process. I have tried this technique several times both with mixes and scratch recipes and have gotten good results.
I have seen these mixes on store shelves and have considered picking up the carrot one but my baking has trended to scratch over the years so I fear the mix would sit on my shelf for a good long while.
