Jen's Wedding Cake
Jen, who goes by gimli417 on
the Community Board, and her sister made this beautiful wedding cake for her wedding. She doctored two Cake Mix Doctor recipes to give it a chocolate layer in the center, a wonderful addition.
Since this is
the first time we've posted a Community Board member's cake on www.cakemixdoctor.com, we thought this one would be a good match, because it was the first time Jen used the Cake Mix Doctor!
To make this cake, Jen used
the Bride's Cake recipe (p 192, CMD), without the raspberry and white chocolate, for the top and bottom layers, and the Basic Buttermilk Devil's Food Cake (p 410, CMD) for the middle chocolate layer.
Jen says she frosted
the cake with the Basic Buttercream frosting (p 416, CMD), with extra powdered sugar added to stiffen the frosting for decorating, per her sister's suggestion. Her sister did the decorating.
Everyone knows that in baking, problems arise, and
there's no time more likely than a really important occasion. But, half the fun is in fixing it, as Jen found out.
"When my oven died during
the first round of baking (the chocolate layers), the half-baked cakes were carried two houses down, the night before the big day, gah, and when they were done, they came out perfectly sized, with no dome to slice off, so no cake wasted there."
When she posted
the picture on the Community Board, she said that she'd recently taken the top layer out of the freezer and enjoyed it again.
"Afterwards, I got so many compliments on how great it tasted, compared to so many pricey bakery ones. And
the fact that it tasted just
the same a year later cemented my decision to stick with mixes from now on!"
